Wrapping up the Weekend

Nothing much to say here this evening: I ate like crap this weekend and today, my Daddy was in a house fire yesterday (everyone's okay and they're in a hotel while they look for a new place), and I broke my glasses a couple of hours ago so I don't want to stare at the computer for too long.

Tomorrow's a new day. I forgive myself for the burger and fries I had for dinner, and I commit to making the rest of the week a good one.

Oh yeah, .6 gone when I weighed Saturday morning. Not what I was hoping or expecting, but still a loss.

Check your smoke detectors before the week is over.

I'm Excited

About getting on the scale in the morning. Does this mean I've lost my mind?!?!

I'm going to bank a loss this week. A good one. I can feel it. Not 3 pounds or anything crazy, but something more than than the .2 or .6 that I've been seeing lately. It's been a good week, and tomorrow morning at about 9, I'll know exactly how good. I'm also getting a haircut this afternoon. I wonder how much hair weighs...

My Scale at Home

Progress. I stepped on my scale at home this morning and saw progress for the first time in three weeks. I know you're not supposed to track your weight on two different scales, that you should stick with one for consistency. But I've been doing this for a while now, and I've figured out the difference between our scale and the official WW scale. Just seeing the change at home this morning makes me darn sure that Saturday's step up on the official scale will show a decent loss.

Now, if I can just behave the rest of this week and not blow it...

Tuesday Food Journal

Mom and I are heading to Nomadic Notions this evening for an earring beading class. She's so much better at this sorta thing than I am, but I think it will be fun. Maybe I'll surprise myself and make something fabulous!!!

So, nothing exciting here, just my food journal for the day. Wouldn't it be nice to lose a full pound this week?!?!

I wonder if the salad I ate for dinner last night negated the ice cream that I had for dessert??? Probably the other way around...

Wom Kim's Peach Pudding Recipe

You've asked for it, now here it is. I got this recipe from Mom who got it from a co-worker who got it from a friend who got it from Hyde Park Bar and Grill. Or so that's the story...

Wom Kim's Peach Pudding

14 oz. butter or margarine (room temperature)
3 1/2 cups granulated sugar
2 large eggs (room temperature)
2 tsp. vanilla extract
3 3/4 cups all-purpose flour
1 1/2 tbsp. baking powder
1 tsp. baking soda
1 tsp. Kosher salt
1 2/3 lb. frozen sliced peaches (not in syrup)
1 2/3 cups buttermilk
heavy cream or whipped cream (optional)

Preheat oven to 350F.

Thaw and drain peaches. Using the high speed on your mixer, beat butter or margarine until smooth, adding the sugar a little at a time. Beat until light and fluffy.

Reduce mixer speed to to low, add vanilla, then add eggs one at a time until well incorporated.

Sift flour, baking powder and salt together.

Heat buttermilk until warm to the touch then add baking soda, remove from heat. Using the low speed on your mixer, slowly add buttermilk and flour into butter mixture in five steps, alternating between the two as you go (buttermilk, flour, buttermilk, flour, buttermilk). Mix for two minutes.

Spray 9x13" baking pan with non-stick spray, fill with batter and spread the peaches evenly over the top. The peaches will sink to the bottom during the baking process.

Cover pan with foil that has been sprayed with non-stick spray on the underside.

Bake covered for 1 hour. Remove foil and bake for an additional 15 minutes or until lightly browned on top.

Service portions warm and covered with heavy cream or whipped cream if you desire.

Moving Past a Plateau

How many times have I said it??? I need to move more. I need to get some serious exercise. I need get my body sweating and working.

I weighed this morning. Down 0.2. These have been the slowest three weeks of weight loss ever. Don't get me wrong, maintaining -- and even dropping two-tenths of a pound -- is great. But I can do better. I can do more. And I really think it's all in the activity for me right now, or the lack there of. Walking dogs is only taking me so far. Time to amp it up!!!

So, that's my plans for the coming weeks. And in my new motivated mood, this morning I registered Cole and myself for the 2007 Arts Run 5k on Sept. 8. I don't expect to be running the 5k at this point, unless something wild and crazy happens in the next few weeks and I start (gulp) jogging, but I at least plan to walk the heck out of it.

Fresh Applesauce Recipe

Boring post. I'm sorry. All you're getting today is my food journal and a recipe for fresh, homemade applesauce that we had a lunch today.

Breakfast:
1 cup cereal: 2 points
1/2 cup soymilk: 1 point

Mid-morning snack: banana: 2 points

Lunch: English muffin pizza: 4 points
homemade apple sauce: 3 points (recipe below)

Afternoon snack: pretzels: 2 points

Dinner: Hell on the Red Chicken: 5 points
Mexican potato cakes: 3 points

TOTAL: 22 points. I hit the official WW scale tomorrow morning. My knees are shakin'...



Fresh Applesauce

2 lbs. of your favorite cooking/baking apple (for me it was five large Fuji apples)
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/2 cup apple juice
1/4 cup sugar

Peel and slice apples and place in large saucepan with apple juice. Bring to a boil. Cover and reduce heat to a simmer, stirring occasionally for 15-20 minutes, or until apples slices are soft.

Add nutmeg and sugar; stirring constantly until sugar is completely dissolved. Remove from heat and add cinnamon; mash with a potato masher until you get a consistency you like.

Chill completely. Sprinkle with a little more cinnamon to serve.

Notes: Two Weight Watchers points (if you care) per 1/2 cup serving. You can even replace the apple juice with apple cider. That might be especially good for a wintertime taste. Let me know if you try it!!!

Thursday Nerves

Why is it that every Thursday I get nervous about my upcoming Saturday weigh in??? I step on our scale here at home almost every day to keep an eye on how things are going. And according to our non-official scale, there hasn't been much movement this week. It's frustrating.

But then I remind myself that a slow loss with lessons learned and mastered along the way is the best route to take. I try to remember that I am 39 pounds lighter than I was at one not-too-distant time in my life, and that alone is a giant win. Or loss if you want to think of it that way.

I want to be very good today and tomorrow as I get ready for my weigh in on the official WW scale. So my plan includes extra water, an extra walk with each dog and 10 minutes each day on the Hula Hoop. Good times!!!

What I put in my mouth today...

Breakfast:
toasted English muffin and honey: 3 points

Mid-morning snack: banana: 2 points

Lunch: Which Wich? sandwich: 7 points
chips: 4 points


Afternoon snack: peanut butter and saltines: 5 points

TOTAL: 25 points. Three over what I was aiming for. But Thunder and I did walk 3.1 miles at the Hike and Bike Trail this evening. He even pulled me up to a jog a few times.

I Miss My After-School Nap and Snack

I eat five times a day. It's best for me and my blood sugar. And I try to eat at the same time every day: breakfast at 9 a.m., my mid-morning snack around 10:45, dinner at 7:30, etc. But my afternoon snack time is kicking my butt. It's not about being hungry or needing food, it's about some part of my brain wanting to do nothing but eat from 3 p.m. until about 4:30. What is that all about?!?!

I took a step toward an a-ha moment a couple of weeks ago when I was in a Weight Watchers meeting. Pam was asking people about their triggers: emotions, family gatherings, a certain time of day. A few other people in the room were also having that 3-5ish ravenous feeling, not of hunger, but the need to eat. Pam definitively gave us the reason behind it: the after-school snacks we used to get when we were kids.

Can that be true?!?! Can something that happened daily for several years so many years ago still be affecting the way I eat?!?! And if that's the case, when are we gonna throw a nap back into the mix???

**If you've never grilled a freshly sliced pineapple, make plans to do it this weekend. It's such a great summertime side to anything you can prepare. Sprinkle with some cinnamon and a drop of honey, and grill until you're happy.

TOTAL: 21 points. I don't remember the last time I came in under budget.

Patience, Grasshopper

Well, I weighed in Saturday, just like I always do. And the scale didn't budge. No loss, no gain. And that's really fine.

I still have 9.4 pounds to lose before I reach my goal, and if there's one thing I've learned along this journey, it's patience. I don't need to be at goal by a certain date for a wedding or getting into a bathing suit or going on a trip. I'm reaching for my goal to maintain it and live there. Period.

I've lost and gained and lost weight before, but this time I truly feel like I'm looking at it differently. It's not about a rush to lose 2 pounds by Saturday. It's more about learning to control my portions and cook more healthfully and get my body moving. It's about allowing myself a splurge and forgiving myself, knowing that I haven't ruined everything with one margarita or piece of birthday cake.

This time for me, it's about losing the weight and learning to maintain. Before, it's always been just about losing the weight. For some reason, that feels like a huge lesson and shift in my thinking. And it feels good and right!!!

I Met Chef Duff Today!!!

I got to meet Chef Duff Goldman today!!! The Ace of Cakes is a cutie in person. He just seemed like one of those people who can have a good time wherever he is and whoever he's with. Plus, he said he loves Austin. Who doesn't?!?!

He didn't actually bake a cake today, but he did do an icing technique demonstration on a guitar. Then played "Happy Trails" on the decorated guitar. He was at Barton Creek Square Mall as part of a Super Chefs Live Tour.

I'm a Food Groupie

Chef Duff Goldman is in town. And he's headlining a cooking demonstration and cook-off -- Super Chefs Live -- tomorrow at Barton Creek Square Mall. Ever since I heard the news this morning, I've been trying to decide what to wear. Odd, huh?!?!

Mom is going with me, and we really don't plan on staying the full five hours. (There is shopping to be done at IKEA afterall.) I just wanna stay long enough to see what's going on and maybe get a picture with the Ace of Cakes. Or at least a picture of him.

And if they happen to be offering any tastes of anything yummy, luckily I'm weighing in before we go to the show.

Speaking of... I'm nervous about weighing tomorrow. I've had a good week, but it's also the week before, well, that's TMI.

Cleaning out the Clutter

I'm on a clutter-cleaning kick right now. It started in the spare bedroom/scrapbooking room, and my closet is next. There are clothes in there that I vow never to wear again. Once I hit my goal weight, I will set a "red-flag" weight. That will be the number on the scale that I commit to never going above again. So I won't need many of the clothes that are in my closet currently...

I found a pair of Gap jeans yesterday that I've had for years and years. When I was in that size, it was the one pair of jeans that I felt looked good on me. They now sag and bunch, and that's a good thing. A great thing. But I don't need or want to keep them around "just in case." There are also t-shirts that Cole makes fun of when I put them on with shorts because you can't even see the shorts. I need to be wearing clothes that fit, and not holding onto those that take me back 20 pounds or more. The Gap jeans may be the hardest piece of my wardrobe to part with. But I'm doing it.

Thanks for the Beauty

Lady Bird Johnson passed away today.

The next time you see of a beautiful hillside covered in Bluebonnets or a single Buttercup on the side of a country road, think of her and all she did to make this country -- and the great state of Texas -- beautiful.

I took these pictures at the entrance of the Lady Bird Johnson Wildflower Center just last month.

Her legacy will continue in the nature around us.

Workin' It

I need to start working out. I walk several dogs several times a day, but I need to start doing some intentional exercise of some sort. The problem: I don't like it.

I have several ideas in mind... I could hop on my bike and cycle a few times a week. I could buy a stability ball and work with weights in the comfort of my own home. I could grab my iPod and take up jogging. I could strap on the pedometer and not stop walking until I reach 10,000 steps each day. But I make excuses...

It's too hot. I don't like to sweat. I need to fix dinner. I've already had a shower today. I wanna sleep just five more minutes. Something good is on TV.

Your thoughts???

But it's just time. It's been time for a long time. I'm pleased with the size I'm getting to and the progress I've made, but now I'm ready to work on the shape. I'll keep you posted...

Kona Grill Austin: A Review

Cole and I tried the new Kona Grill at The Domain in Austin yesterday afternoon. What a cool shopping center!!! I won't call it a mall; it's more like a little mini city. The stores are all lined up along a mini city street. You can park on the little street in the center of the action or park in one of the bigger parking lots surrounding the center. The sidewalks were ample for all the folks that were running around, and the names hanging from the signs were enough to have me drooling a couple of times: Betsey Johnson, Louis Vuitton, Tiffany & Co., Burberry. We did some shopping at the Victoria's Secret there, and that's a story for another time... How do you spell "biatch"???

Anyway, before we made our way out into the little bustling city street to wander around and take pictures of the shopping center, we stopped for a very late lunch at Kona Grill. Cole's mom has told us several times how good the one in San Antonio is, so we figured we would be heading into something good. As a good little dieter, I checked the menu online and set my mind on a healthy choice. I was ready and prepared to not let a huge, beautiful, new restaurant ruin my progress.

And then we ordered the Sweet Maui Onion Rings... Wow!!! In my opinion, they were the highlight of the meal. I'm not an onion fan, or normally an onion-ring fan, but these babies were so good!!! Cole described the size best when he compared them to a grapefruit. Seriously. A giant middle-of-summer, Texas-sized grapefruit. They were enormous!!! They were served with a "seared pineapple chipotle" sauce that tasted a bit like pineapple juice mixed into a spicy ketchup. It was good. But back to the onion rings...

Many times, onion rings to me are like big hunks of fried batter with a little bit of wimpy onion inside. Not these, oh no. These were super-fresh sweet onions with the perfect amount of light batter. They didn't need a thing; they didn't even really need the sauce. But the sweet onion and spicy sauce were a great combination. Order some when you go, even if you don't claim to be an onion fan.

I had decided before we even sat down that I would have the Shrimp Tempura Rolls with a little side of edamame. They were very good. Very fresh. And somehow the perfect temperature. (I hate eating super-cold rolls. ) The little fried shrimp were rolled in rice and seaweed along with cucumber and avocado. And they weren't rolled too tight; they were just loose enough that it didn't seem like work to eat them. If that makes any sense... hehe Again, very fresh. And good.

Cole had the Jerk Chicken Sandwich minus the chipotle mayo. We're just not mayo people. His sandwich was a big and beautiful thing with grilled chicken, swiss cheese and a thin slice of grilled pineapple, served with a side of fries. When I asked how his sandwich was, I got the one-shoulder shrug and no verbal response. Though he did say the French fries were excellent. After dessert, I declared that the onion rings were the highlight of the meal, but he said the fries may have even topped the onion rings. How did I not get to taste one?!?!

Oh yeah, dessert. We tried the Macadamia Nut Pie. It made a pretty presentation. Small in my mind. I guess because we're so accustomed to desserts the size of our head coming out of a restaurant's kitchen these days.

It was good, but if we ever go again, I'll probably vote to try a different dessert.

Immediately when it came to our table and I took my first look, it made me think of pecan pie but with macadamia nuts on top instead of pecans. It was only about half the thickness of a piece of pecan pie from Mom's house, and it wasn't nearly as sweet or fresh-tasting. It was served with a good vanilla ice cream though. If you're a true lover of macadamia nuts, which I like but not love, then you might give it a try.

Overall, a good dining experience. If only they could do something about the gnats and flies in the place. I trapped one under a bottle of soy sauce as we were leaving.

A Story About a Fig

As I start this post, it's 10:50 a.m. and I've just returned home from my Weight Watchers weigh in. I lost 1.6 pounds this week, and dipped below that zero that I've been aiming for. I'm now at 149.4. I can't believe I just said that outloud for the whole world to hear!!! It seems like 188 was a lifetime ago...

I also sat down with Pam, my Weight Watchers Leader, and put my goal of 140 down in writing. So 9.4 pounds to go to goal, and it feels attainable to me this morning. I really believe I can do this.

And even today at 149.4, I'm now considered "normal" on the BMI scale. Now, there are times when it's good to go above and beyond the usual and the average, but then there are times when it's even better to be just normal.

Oh, and I tried a new food last night. I've been wanting to do that: Sample fruits and veggies that I've never tasted before. Last night, it was a fresh fig. I didn't even know what it was when I saw it on a tray full of bright yellow pineapple, red cherries and green kiwi. There was this tear-drop shaped thing with a stem, and I had no idea what it was. A fig??? I was nervous. My experience with figs is limited to a sugary square cookie. But, it was good. It wasn't overly sweet, and it was meaty like an apple, but softer with the little gritty seeds right in the center. If you've never tried a fresh fig, do. Two medium figs are just one little tiny WW point.

Is This What It's Like to Have Kids???

Poor ol' T.J. He woke us (well, Cole) up at 2:30 this morning. He was running around like a crazed dog, even jumped up on our bed to get our attention. I noticed none of this, so Cole finally woke me up to let me know something was going on...

Upon turning on a couple of lights, we could see that T.J. was covered in little red bumps. Hundreds of them. So covered that his normally sleek black coat looked like the lumpy skin of a giant toad. And his face was swollen. So much so that we couldn't even see his cute little teeth.

I called our vet's phone number, which I knew would have an emergency number listed. I called that number and got someone named Chris on the phone who immediately thought it was hives after hearing my description and asked if we had any Benadryl on hand. For some odd reason (probably something T.J.-related), we had some children's chewable grape tablets in the medicine cabinet. Chris said to give T.J. three of them. So, I crushed them into some peanut butter -- Thunder and Bugsy also got a special midnight snack covered in peanut butter -- and we waited.

Almost an hour later, T.J. still couldn't get comfortable, and I was still awake listening for him (Cole had been snoring again for several minutes), so T.J. and I moved into the living room to allow Cole to get a couple more hours of sleep. It was almost 4 a.m. at this point. I turned on the light and noticed that the Benadryl was apparently working on his skin, a good many of his bumps were gone, but his face and neck were still pretty swollen and spongy to the touch. So at 7:30, I called Dr. Garza's office and secured an 11:30 appointment.

After a steroid shot from Dr. Garza and a couple of treats, T.J. slept all afternoon. Dr. Garza didn't think he got into anything terrible, but definitely something that gave him quite a reaction. He's supposed to continue on his grape Benadryl through the weekend. Hopefully we won't see any lingering problems at all come Monday...

Apart from that, here is how my day has gone...

We saw Disney-Pixar's Ratatouille yesterday afternoon. So cute!!! If you're a fan of Disney or Pixar or rodents or food, you'll find this movie to be a ton of fun. It goes without saying, but the animation was amazing!!! The nighttime views of Paris made me want to visit, and the details in Gusteau's kitchen were spot on, right down to the scratches and dents on the well-used pots and pans. I tried to watch what I ate this weekend while Gran and Sailor were in town, but I didn't keep track of points. So now that it's Monday, I've got the calculator back out.

Oh yeah, I weighed Friday morning (a day early) and was .6 down. I really, really, really hope I can knock a full pound out this week.

Here's how Monday went...

Breakfast: granola bar: 2 points
banana: 2 points

Mid-morning snack: apple parfait: 2 points

Lunch: panini: 6 points
sliced apple: 1 point
WW snack cake: 1 point

Afternoon snack: sugar wafers: 3 points

Dinner: grilled chicken breast: 5 points
roasted cauliflower: 0 points

TOTAL: 22 points on the nose!!!
