Dinner Tonight???
After eating a full buffet which included BBQ, fried corn, pecan pie and margaritas the last few days, I'm having a hard time deciding what to cook for dinner the next couple of nights.
So, inspire me you seven readers, you. What are you having for dinner tonight (or what did you have last night if it's 2 a.m. when you're reading this)???

For dinner last night/this morning at 2 a.m., I threw some Restaurant-Style Tostitos on a paper plate and covered them with about half a pound of shredded Mexican-style cheese from a bag.
Now I'm about to run to Baja Fresh and grab a big ol' plate of beef fajita nachos and settle in to watch some college hoops for the next 8 hours or so.
Just call me Betty Crocker. It's a wonder I don't weigh 300 pounds.

Unlike Stace, we had a meal straight from the pages of the good ol' Betty Crocker Cookbook-Spicy Chicken & Rice. It is sauted onion, bell pepper, & garlic combined in a skillet with rotel, V8, rice, corn, and black beans then seasoned with chili powder, salt, and cayenne pepper. After it comes to a boil, you pour it in to a baking dish, add the chicken and back for about an hour. It's high flavor, low fat, easy dish. We paired it with a fresh spinach salad AND then some awesome mini molten chocolate cakes for dessert. The dessert is a must try- it is from the Martha Stewart website. They are great for portion control b/c you make mini cakes in muffin tins! :)

Goodness... that puts anything I could have come up with to shame. The V8 throws me though. I don't guess I've ever heard of that in a dinner recipe. Hangover recipe, maybe... hehe
